The 37-year-old This Morning presenter is set to replace Ant McPartlin later this year when the popular series returns.
She will stand alongside long-term pal Declan Donnelly while Ant continues his recovery from drug addiction.
Speaking for the first time about her new job, Holly said she has spent the summer organising the "logistics" of her move Down Under.
She told co-host Phillip Schofield: "When I first found out, it's obviously bitter sweet, but it was exciting.
"You try and work out when you'll go and how long for.
"The kids are coming with me so I've been speaking with the school seeing how that's all going to work.
"Dan's coming with me, then all of a sudden that's it, logistics are all sorted and you go oh, there's going to be spiders and stuff."
Holly then revealed to fans the three things she's not looking forward to about her new presenting role.
She said: "One is the eating challenge. Even if you just ate chocolate and opened your mouth to show me right now I wouldn't like it.
"The fact you've eaten a body part that you're not meant to, it's going to be horrible.
"I'm also not going to like the smells. I'm not good with smells.
"And when they come out and they've got stuff still on them.
"What have I done?"
Instead of comforting Holly on today's show, Phil mocked her as she opened up about her worries.
He said: "When you told me in secret over the summer I just couldn't believe my ears.
"In a country where everything eats you? You'll be fantastic."
The Sun exclusively revealed Holly held secret talks with ITV bosses about standing in for Ant on the juggernaut series this year.
In a statement at the time she said: “I couldn’t be more excited to have been asked to stand alongside Dec for the next jungle adventure.
"I love Ant and want to send him my best wishes and support for a continued recovery. These are big shoes, not to fill, but just to keep warm for a little bit."
