The ITV2 alumni, 25, who rose to fame on season four of the matchmaking programme, delighted fans with a stunning selection of Instagram-perfect snaps.
Ellie took a sultry selfie in the pool of her Six Senses Ibiza Hotel wearing a red and orange crochet knit bikini.
She flashed a pout as she stared straight into her phone camera, with her wet blonde locks slicked back.
The Love Island favourite then sprawled out onto a partition in the pool as she stretched out, with the horizon of the White Isle proving the perfect backdrop.
Other images showed Ellie side-profile as she waded in the waters before she enjoyed some lunch.

The reality TV star is no stranger to sexy swim snaps and recently posed in a thong bikini.
She also donned a leopard-print bikini as she soaked up the sunshine.
After leaving the villa and splitting from Charlie Brake, she went on to kiss Pete Wicks and date Towie's Joey Essex.
She was also rumoured to have been romantically linked to Marcus Rashford and Jack Grealish.
Ellie previously exclusively told The Sun that Love Island bosses edited her stint on the show to make her look bad.
She had the nation behind her when she joined the ITV2 series in 2018 and appeared to be falling for Dr Alex.
But she soon found herself issuing a grovelling public apology when she got into a heated row with Georgia Steel and branded her an "ugly c***".
The bust up happened after Georgia denied kissing Laura Anderson's other half Jack Fowler – even though she did.
Recalling her experience on the show, Ex On The Beach star Ellie said: "I didn't really like how I was portrayed in Love Island. I don't feel like a true representation of what I am really like was shown.
"They made me look a bit b****y. I got caught up in a few situations in the villa and I was defending friends but the way they did it made me look like I was getting involved in situations I shouldn't have, and that wasn't the case."
